Grilled Cheese Chapatis


This could also be considered a paratha, the difference being that chapatis are made first, then assembled with cheese and cooked like a paratha.

INGREDIENTS:
chapatis- two per paratha
grated cheese such as mozarella
grated bell pepper (optional)
minced chilis (optional)
finely diced tomato(optional)
salt, and other condiments as desired

INSTRUCTIONS:
1. First make chapatis as many as needed. 1-2 per person in a large meal is plenty.
2. Assemble by adding filling and a tiny sprinkle of salt, etc, as desired.

3. Cook by heating a griddle. Add a pat of butter. Put the chapati with filling on top. Add another chapati on top and a little more butter. Cook a couple minutes of one side


4. Flip over and cook the other side until both sides nicely browned. Slice in halves.

Can try some variations with these. The point is having cheese in the center to hold the two chapatis together.
