Ginger Candy



INGREDIENTS:
1 cup of ginger slices, 1/8 " thick.
1 cup water.
1 cup sugar.
sugar for candy coating

DIRECTIONS
1. Boil the sugar and water together about 5 min until the sugar is dissolved.
2. Add the ginger and simmer over medium-low heat about 30 min, until the ginger is translucent and tender.
3. Lift the ginger out of the syrup with a slotted spoon to drain (a colander is good) and cool.
4. Roll the ginger slices in sugar to coat.
These may be stored in an airtight container at room temp for up to a month.

Use the extra ginger syrup to flavor tea, soda water, hot milk or serve with pancakes.
