Potato and Cauliflower Subji (Aloo Gobhi Subji)


Serves 3-4
INGREDIENTS:
  • About 1/2 a medium sized cauliflower, chopped
  • 2-3 small potatoes
  • 3-4 T ghee
  • 1 t fresh gingerroot, minced
  • 1 pinch hing
  • 1 t coriander powder
  • 1/4 t black pepper
  • 1 t turmeric
  • salt

PREPARATION:
  1. Heat the ghee on high heat and chaunce the ginger until browned. Then add cumin and fry until brown,. Add remining spices.
  2. Stir in the vegetables and sautee in ghee and spices a few minutes
  3. Add water to just barely covering the veggies. 
  4. Cover and cook on high heat until almost all the water has evaporated. 
  5. Add salt and offer to Krishna with love.
VARIATION: Stir in some sour cream!
